The truck stops here: Roaming Bull Brasserie rolls into town

The Denver food truck scene will have a new addition to the fleet when the Roaming Bull Brasserie starts rolling down streets mid-May, offering "locally driven world cuisine."

"My husband Jason has been a chef his whole life, and it has always been a dream to open his own restaurant, so we decided to open a food truck as a stepping stone," explains Christine De Baca.

The husband-and-wife duo decided that the food truck scene could use some upscale food with downhome prices, so decided to offer a wide array of tapas. So their menu features bacon-wrapped cherry peppers stuffed with goat cheese and paprika-spiced almonds, as well as a full salad and sandwich lineup.

"We know that the food truck scene is expanding and we wanted to add something different," De Baca says. "Make some nice fresh food available for people that are interested in going to food trucks."

The Roaming Bull already did a tasting event, sans truck, at last month's Totally Tennyson; they hope to get the truck to a brewery for another tasting this month before rolling out a summer schedule. Find out more information here.
