Dishes of DISH: Farm-Fresh Salad from Scratch Burrito

On Sunday, September 7, 2014, Westword will host its twentieth annual celebration of the Denver dining scene, DISH, in Sculpture Park at the Denver Performing Arts Complex, where many of the favorite restaurants of Cafe Society writers and readers will be serving delectable dishes. Like Scratch Burrito and Happy Tap, which is making its DISH debut with a farm-fresh salad -- our pick for Best Salad Where You'd Least Expect It in this year's Best of Denver.

For a place that made its name with gigantic, meat-stuffed burritos, the Scratch salad has proven a worthy dark horse choice. Not that this salad isn't as satisfying as any burrito -- with organic red and white quinoa, Napa cabbage, shredded carrot, black beans, scallions, cilantro, avocado, pico de gallo and chili lime vinaigrette, it packs a ton of protein into a nutritious package.

"Like most of the creations in our restaurant, this salad is simple, fresh, created completely from scratch and healthy," says owner Clay Markwell. "In our restaurant, we honor good ingredients and make them sing, creating everything from scratch daily, ergo our namesake."

One of Markwell's biggest sources for these fresh veggies is Golden Acre Farm in Golden, run by farmer Jay Plotkin. "It is an all-organic farm, fed by mountain snow melt. From June through October, we work closely with Jay and 50 percent of our produce comes from his farm during those months," Markwell says.

Scratch's signature salad is just one of the dozens of offerings you'll find at DISH, which runs from 12:30 to 3:30 p.m. on Sunday, September 7.
