Dishes of DISH: Smoked Trout Snack From Lola

Lola is cooking up something different for this year's DISH.
On Sunday, September 7, 2014, Westword will host its twentieth annual celebration of the Denver dining scene, DISH, in Sculpture Park at the Denver Performing Arts Complex, where many of the favorite restaurants of Cafe Society writers and readers will be serving delectable dishes. Lola Mexican Fish House, for example, will get in the swim with a Mexican-style snack.

Earlier this summer, the Highland hangout dropped the "Coastal Mexican" from its name, brushed on a fresh coat of paint and refocused its image as a fish house -- but a fish house with a definite difference.

For DISH, Lola will bring its esquites, a cold corn salad that's been retooled from Lola's dinner menu version. The cut corn is tossed with roasted red onions, cilantro vinaigrette and charred tomato, then topped with smoked Colorado trout. Just as street vendors serve esquites throughout Mexico, Lola will be passing out cups of corn to hungry pilgrims at DISH.
