Dishes of DISH: A Vegan Treat from City, O' City

On Sunday, September 7, 2014, Westword will host its twentieth annual celebration of the Denver dining scene, DISH, in Sculpture Park at the Denver Performing Arts Complex, where many of the favorite restaurants of Cafe Society writers and readers will be serving delectable dishes. For City O' City, Denver's most buzzed-about vegan/vegetarian restaurant, chef Kurt Eichenberger and his kitchen crew will be serving up something special for diners of all diets.

Nothing says "comfort food" like mac n' cheese, and City O' City's vegan version has been pleasing diners for years on the restaurant's regular menu. The mini version that will be handed out at DISH is made with orecchiette pasta sautéed in vegan "cheese" sauce, topped with panko breadcrumbs and tossed with broccoli. "This dish is a direct representation of our restaurant, bringing good, tasty comfort food to vegans, vegetarians and all consumers alike," Eichenberger says. "We're showing that we can make dishes just as good without the animal products."

Just how does City, O' City manage to make its not-cheese taste so much like the real thing? Chef Eichenberger was kind enough to share with us the ingredients for his vegan sauce: Garlic, onion, white wine, carrot stock, nutritional yeast, coconut milk and anatto spice makes the magic here.

Guilt-free mac n' cheese is just one of the dozens of offerings you'll find at DISH, which runs from 12:30 to 3:30 p.m. on Sunday, September 7. Forget the vegan version of their Mac and Cheese, the best thing you've ever tasted in your life is their Mac and Cheese with the Teleggio cheese sauce. I swear if they take away that option to appease the vegans I'm never stepping foot inside again!!
