Denver chefs have intimate relationships with their knives -- and a lot of other cool kitchen gadgets.

Knives, meat grinders, tweezers. Every chef has a favorite kitchen gadget, and as part of my Dish interviews with many of the Denver chefs who make culinary magic in this city, I asked them about their favorite kitchen tools.

Not surprisingly, knives are sacred (although for several different reasons), and none of our chefs, thank God, admitted to having a love affair with an egg separator. But still, some of their answers (hooks?) may surprise you:

What are you serving at Dish? Squash blossom quesadillas and mahi mahi ceviche. Squash blossom quesadillas are really popular in Chihuahua, Mexico, and summer squash is in season right now. They're a delicious complement to our refreshing, tangy, and succulent mahi mahi ceviche.

What are you serving at Dish? Gumbo, red beans and rice, all of which represent American street food, and they're rustic and full of flavor -- just like us. We chose these dishes because we want to ensure that the guests get a great sampling of mikes² kitchen; we also took into consideration that serving 2,500 guests in one service needs to be flawless.

What are you serving at Dish? The Swiss sausage, which is a typical European street food found in Austria and Switzerland. It's a free-range veal-and-pork sausage served on a fresh French banquet, topped with chopped onions, parsley, spicy mustard, clover sprouts, and then dusted with a delicious curry-based blend of twelve spices. It's our signature sandwich. Alex Gschwends is the co-owner of the restaurant, and his grandfather, Leo Gschwend, came to Colorado from Switzerland in 1950 and started a successful catering company. Out of all the amazing dishes he prepared, the Swiss was his favorite.
