Many plant-based eaters weren't raised that way, and even have fond memories of homemade casseroles -- including the cheesy, sausage-laden baked pasta dishes you'd sample at potlucks. This recipe, adapted from the Post Punk Kitchen, uses cashews and roasted red pepper for a thick, creamy sauce; we added crumbled sausage-spiced seitan for a meatier experience.

Soup is a winter favorite for lots of cooks -- it's easy, it's cheap and it's filling on a cold day. And a little effort nets you a big pot that can last several days (or feed lots of people). But for hungry eaters who aren't satisfied by a bowl of soup, homemade dinner rolls are just the ticket. And you can't beat the way they warm the house, filling it with the smell of fresh-baked bread!

It's the time of year when everyone is trying to eat healthier, and this dish, adapted from an online recipe, is a good option, with Brussels sprouts, olive oil, almonds and just a smidge of honey. We increased the amount of dressing amount and used vegan Parmesan instead of actual cheese; you can also substitute maple syrup or agave for the honey.

Shallot-and-thyme mashed potatoes with cashew gravy for Meatless Monday

Categories: Meatless Monday

shallot-potatoes-cashew-gravy-final.jpg
Mashed potatoes and gravy would seem an option for plant-based eaters during the holidays, but the dish is often full of hidden menaces. Not only are the potatoes usually made with butter and milk, but the gravy almost always contains chicken, turkey or beef. This recipe, though, calls for nothing more dangerous than shallots and thyme in the spuds, and is topped with a creamy cashew gravy for an all-vegetarian version that doesn't sacrifice any flavor.

vegan-stroganoff-final.jpg
Everyone reaches a point during the holiday season when the thought of one more bite of holiday food makes you feel like never eating again. You'll get over it -- we promise -- but in the meantime, there are plenty of other comfort foods that can fill you up without conjuring up visions of sugarplums. This vegan stroganoff is one of them; adapted from Vegan With a Vengeance, the recipe uses red onions instead of shallots, our homemade mock chicken stock and seitan from Denver Seitan Company (you can also make your own seitan, but Denver Seitan's is better than anything we've been able to do at home). And if you eat eggs, feel free to use egg noodles instead of the linguine we chose.

It's tough to find the time to cook much of anything during the busy holiday season, but you don't have to sacrifice a sit-down dinner for drive-through. This jerk seitan sloppy joe recipe takes less than half an hour to throw together -- including the creamed spinach that tops off the sloppy joe -- and will feed four to six hungry adults, so it's a great choice for a weeknight meal. We adapted this recipe from Isa Does It.

Anytime you use kale -- or any other green, for that matter, from collard to mustard -- you're left with stems that most people throw away. But you can saute these, much like the leafy parts of the plant, with some very simple ingredients for a fiber-rich (and nutrient-laden) side dish that's super-easy and tasty. We adapted the Vegan Soul Kitchen version of "collard confetti" to make this kale confetti dish.

Over the past few weeks, Meatless Monday has shown you how to make everything you need for your Thanksgiving table -- all totally vegan dishes -- except dessert. But we wouldn't forget about the most important aspect of any holiday meal: This vegan pumpkin cheesecake fits the bill, especially when topped with dairy-free coconut whipped cream. You'll want a strong blender or food processor for this recipe (adapted from a gluten-and-dairy-free blog), but you won't need to use the oven at all -- a bonus this week!
