Boulder is a town where it's reasonable to expect a lot from its eateries -- especially if you're a vegetarian or vegan. The college outpost has been hailed nationwide as a great place for food fans, and with all the hippies and alternative-lifestyle types, it's a given that any restaurant will have at least one vegetarian-friendly plate on the menu. But Half Fast Subs, located on the Hill within a stone's throw of the University of Colorado campus, takes its obligation to the plant-based community to a whole new level with its staggering menu.

Shish Kabob Grill has some of the best hummus (and other veggie options) in town

Categories: Veggie Girl

Clearly, any place called Shish Kabob Grill is going to specialize in grilled meats -- and Shish Kabob does those very well. But if you're looking for a plate of falafel, hummus and baba ghanouj near the Capitol, sans meat, this is the spot for you. We named it Best Middle Eastern Restaurant in 2011, and it lives up to that title, with fare that's suitable for both plant-based eaters and carnivores.

Meaty beany chili and corn muffins from Isa Chandra Moskowitz's new cookbook, Isa Does It! Photo by Vanessa Rees
Nine out of ten vegans can tell you exactly who Isa Chandra Moskowitz is. VegNews named her "favorite cookbook author" for seven years in a row; she's been creating recipes for zines, bestselling cookbooks and her beloved website, Post Punk Kitchen, for more than two decades. And she's just released her latest masterpiece, Isa Does It, jam-packed with easy, fast, plant-based recipes that are bound to be a staple in many kitchens before long (for vegetarians and meat-eaters, too). She'll be signing the book at the Tattered Cover, 2526 East Colfax Avenue, tonight at 7:30 p.m. In advance of that appearance -- complete with cookies! -- we caught up with Isa to talk about the new collection of recipes, moving from Brooklyn to Omaha by way of Portland and more. Keep reading for a recipe of that meaty beany chili with cornbread shown in the photo!)

Federal Boulevard is a great adventure if you love ethnic food -- but it's not always easy to tell what's vegetarian-friendly. And if you're a vegan, you'll have an even more difficult time separating the fish cakes from tofu. At New Saigon Bakery & Deli, though, you can enjoy a vegan banh mi. And if you'll consume dairy and eggs, the pie's the limit: You'll find some truly phenomenal desserts here.

We last visited Steve's Snappin' Dogs almost three years ago, but on one recent, rainy day we decided to swing by the the hot-dog stand to get one last taste of summer. And despite the weather, we found plenty of other patrons patrons following our lead -- proof that you don't need a warm summery day to appreciate a good dog.

There are 26 Tokyo Joe's location in Colorado -- a state that may pump out more fast-casual chain stores per capita than any other (see: Chipotle, Garbanzo, Qdoba, Smashburger, etc.). Although the menu includes a vegetarian sushi roll that's not bad (it has cream cheese, which is bad news for vegans), Joe's really delivers the goods with its bowls, which you can build from scratch with as many veggies as you like, grilled fresh and served with tofu, your choice of brown or white rice and your desired sauce.

For the first time in close to two decades, Chipotle is rolling out a new protein. The Denver-born chain will debut "sofritas" in all 74 of its Colorado stores today.

In advance of the roll-out, we got a chance to try the new protein (spoiler alert: it's meat-free, but so freaking delicious that just about everybody will like it) and chat with Chipotle chef Nate Appleman about developing the tofu-based ingredient.
