Pho 007 sneaks on to the Littleton dining (and vegetarian) scene

The stretch of Littleton Boulevard where Pho 007 opened last year -- just east of downtown Littleton -- boasts a handful of restaurants that all attract a decent amount of business. That isn't surprising, given the lack of dining options to draw in passersby. But what is surprising is the quality you'll find at Pho 007, which has been making a name for itself not just as one of the few pho joints in the southwest 'burbs, but as one of the better places in the entire metro area to grab a hot, steaming bowl of rice-noodle soup. Best of all? It serves up a fabulous vegetarian-broth pho that's worth a trip to investigate even if you don't live nearby (and definitely worth regular stops if you do, especially at this time of year).

The Blue Cow's vegetarian options are breakfast bliss in Morrison

There's a little something for everyone at the Blue Cow, one of our favorite breakfast spots in Morrison -- mostly because of the fresh fare and down-to-earth surroundings. The walls are covered with local art (including some Red Rocks paintings by "Scramble" Campbell that are worth checking out), and you can grab coffee or espresso, an ice cream cone, a draft beer or a bloody Mary alongside whatever food item has taken your fancy.

Native Foods Cafe brings plant-based fast-casual to Glendale

Native Foods Cafe is a plant-based chain that originated in Palm Springs, California, and has since expanded to several more California cities, as well as Chicago, Boulder and, as of last month, Glendale, where it's in the CitySet development. And it didn't take long for this all-vegan restaurant to garner admirers; when we stopped by on a recent Saturday, a handful of people were waiting for the doors to unlock at 11 a.m. sharp -- and within half an hour, the dining room was almost entirely full with plenty of regulars popping in for to-go food, too.

Govinda's Garden brings back the vegetarian buffet, better than ever

Govinda's Garden has been a staple for Denver's vegetarians for years. The eatery at the International Society for Krishna Consciousness, (perhaps) better known as the Hare Krishna movement, has gone through various incarnations, but always returns with its vegetarian buffet on Friday and Saturday nights. After changing its name to Govinda's Garden Cafe in October, this version is already ridiculously popular -- especially now that it offers a vegan option with every meal.

The vegetarian (and vegan) sandwich selection at Half Fast Subs is dizzying

Boulder is a town where it's reasonable to expect a lot from its eateries -- especially if you're a vegetarian or vegan. The college outpost has been hailed nationwide as a great place for food fans, and with all the hippies and alternative-lifestyle types, it's a given that any restaurant will have at least one vegetarian-friendly plate on the menu. But Half Fast Subs, located on the Hill within a stone's throw of the University of Colorado campus, takes its obligation to the plant-based community to a whole new level with its staggering menu.

Shish Kabob Grill has some of the best hummus (and other veggie options) in town

Clearly, any place called Shish Kabob Grill is going to specialize in grilled meats -- and Shish Kabob does those very well. But if you're looking for a plate of falafel, hummus and baba ghanouj near the Capitol, sans meat, this is the spot for you. We named it Best Middle Eastern Restaurant in 2011, and it lives up to that title, with fare that's suitable for both plant-based eaters and carnivores.

Nine out of ten vegans can tell you exactly who Isa Chandra Moskowitz is. VegNews named her "favorite cookbook author" for seven years in a row; she's been creating recipes for zines, bestselling cookbooks and her beloved website, Post Punk Kitchen, for more than two decades. And she's just released her latest masterpiece, Isa Does It, jam-packed with easy, fast, plant-based recipes that are bound to be a staple in many kitchens before long (for vegetarians and meat-eaters, too). She'll be signing the book at the Tattered Cover, 2526 East Colfax Avenue, tonight at 7:30 p.m. In advance of that appearance -- complete with cookies! -- we caught up with Isa to talk about the new collection of recipes, moving from Brooklyn to Omaha by way of Portland and more. Regulars at Osteria Marco, one of Frank Bonanno's Larimer Square staples, crave the seasonal butternut-squash pizza. Staffers say patrons ask for the pizza year-round, but they can only get it in the fall. And as of Friday, it will be back on the menu-- so if you've been craving this unusual blend of ingredients on a pie, your time is coming.

Toast pops up some meat-free options for brunch lovers

Toast is best known for its pancakes and French toast; the eatery boasts six different varieties of French toast and almost a dozen sweet pancake offerings (including a pancake "flight" that will allow you to sample several).
