Caldo is a green chile stew served in New Mexico that has pork, onions, potatoes, and tomatoes in it. Colorado green chile is like caldo minus the potatoes. It's nothing like the green chile sauce that is used everywhere in New Mexico, that is essentially just puréed roasted chiles. My vote is for Colorado green over Texas red.

Just when I thought the argument couldn't get any worse, now we're arguing about spelling.  I quote Grandpa Fred from Sixteen Candles, "Well you don't spell it son, you eat it."

New Mexico green chile is THE ONLY real chile. All CO green is a poor substitute for true NM green chile!

I just find it humorous that Coloradans think Texans are "dumb" yet they don't know the difference between chili and chile *face palms* Tip: Chile is spanish word and is jalepenos ground up like a salsa to top on a meal. Chili is a stew like meal that you can use chile to garnish as topping.
